Join Hayden with Stuart Dundine and his magnificent range of wine.
A note from the Winemaker, Stu.
"After many years travelling, working and studying in wine I settled in the Yarra Valley in 2012 and began Alkimi Wines in 2014. From my love of the Rhône Valley I have created a range which focus’ solely on the varieties grown in the Rhône.
The name Alkimi is taken from the phonetic spelling of alchemy. Making wine is an alchemy as it turns grapes, the natural product, into wine which is the gold. All of this happens with a deep connection to the environment surrounding all of us. Sometimes mysterious and unexplained, this process represents parts of beauty in life itself. Wine means many things for me, but I have developed two great philosophies over time. Firstly, the greatest wines are the purest wines which reveal characteristics of the grapes they were produced from. Secondly, wines should display a personality and tell a story, much like the people who worked hard to make them. I strive to make amazing wines which pay respect to these ideologies.
My personal winemaking philosophies restrict my use of products and technology, where I aim to use only basic, time-honoured principals. My wines are not fined and I like to pick grapes in an early- ripening window to embrace fresh flavour profiles and natural acidity. I use natural yeasts, minimal amounts of sulphur dioxide and minimal (if any) filtration. Practically in the winery I consider my use of water, choice of cleaning chemicals, power usage and I recycle everything as much as I can."
